Easy Pumpkin Butter














Pumpkin Butter is the quickest way to add pumpkin pie flavor to just about anything.  And the easiest way to make it is with this simple four-ingredient recipe.  Actually this is so easy to make, that I feel guilty even calling this a recipe.  Basically it’s as simple as dumping the ingredients into a saucepan and stirring over a medium heat until the sugar dissolves.  Then once the autumn spiced concoction has thickened to a consistency that makes you happy, it’s finished.  And once you have a batch made, the ideas are infinite.  Why stop with spreading it on toast.  You can stir it into your pancake batter for fall flavored pancakes or use it in thumbprint cookies or top your rice pudding with it for a holiday flair like I did in my last blog entry.  Let’s just say that this pumpkin butter will be my new tradition for the season.  Oh and I’ll be doubling the recipe next time.   


Easy Pumpkin Butter
Prep time: 5 min
Cook time: 15 min

Ingredients
  • (1) 15 oz can
  • ½ cup water
  • ¾ cup brown sugar
  • 1 tbsp pumpkin pie spice

Instructions:
  1. In a medium saucepan, stir together all of the ingredients in the ingredients list.
  2. Cook over a medium heat until it begins to bubble then stir it pretty continuously for 10-15 minutes or until it reaches the thickness that’s slightly thinner than the thickness you want because it thickens considerably as it chills. 
  3. Store in a glass jar or Pyrex bowl then let it cool to room temperature before chilling.   
Notes: 
  1. If you don’t have pumpkin pie spice you can stir together 1 tsp of cinnamon with ½ tsp each of the following spices:  allspice, nutmeg, ground cloves and ginger.
