Steak and Gorgonzola Salad

Steak & Gorgonzola Salad

This fresh delicious steak and Gorgonzola salad was inspired by a classic Italian salad I often make with fennel, oranges and Gorgonzola.  I had oranges and Gorgonzola in the house but unfortunately there was no fennel in the fridge.  But I did have a beautiful flank steak and remembered the classic steak and bleu cheese combo and thus my salad was born.

For the dressing, it had to be a spicy orange vinaigrette.  Everyone’s probably familiar with Asian beef with orange sauce.  All I needed to do was borrow a few of those ingredients to add to the vinaigrette and this would be a winner.

And so it was.  What an awesome summertime meal.

Instructions
  1. To make the dressing, whisk together all of the dressing ingredients except the olive oil.  Once the ingredients are combined, slowly stream in the olive oil whisking continuously until you have an emulsified dressing.
  2. For the salad, tear the romaine into bite sized pieces then toss it with the other salad ingredients and half the dressing.
  3. Heavily season the steak on both sides with salt and pepper then in a cast iron skillet over a high heat add a little olive oil and toss in the steak.  Sear it for 3 minutes on the first side and once it’s golden brown flip it and sear for 2-3 minutes on the second side for a medium rare steak or add some time if you want t more well done.  Let it rest on a plate for 5 minutes before slicing against the grain.
  4. Add the steak slices over the salad, then top with the crumbled gorgonzola the remaining salad dressing and serve.
