Pork Piccata with Lemon Broccoli Pasta

This super easy gluten free Pork Piccata recipe with Lemon Broccoli Pasta can be thrown together in mere minutes.   It’s made with pork loin chops which are much leaner than other cuts of meat.  Adding broccoli to the pasta adds a healthy dose of vitamins, minerals and fiber to the meal.  Filling up on veggies is a great strategy to keep you from eating too many refined carbs in the overall dish.  

After all, we are still in the heart of bathing suit season and I have been making a lot of sweet treats lately.  And the broccoli is certainly a better option than having more pasta on the plate.  But no one will be thinking about the healthy ratios when they’re enjoying this succulent lighter pork piccata dinner.  And once you see how easy this is to make, you’ll wonder why you ever go out for fast food.

Easy Pork Piccata with Lemon Broccoli Pasta
Prep time: 10 min
Cook time:  15 min

  •          2 center cut pork chops, thinly sliced
  •          2 tbsp gluten free flour
  •          salt and pepper, to taste
  •          cayenne pepper, to taste 
  •          2 tbsp butter
  •          2 tbsp olive oil
  •          1 tbsp capers
  •          2 cloves of garlic, chopped 
  •          ½ cup white wine
  •          ½ cup gluten free chicken broth
  •          1 lemon, juice and zest
  •          4 oz gluten free short pasta
  •          3 cups broccoli florets
  •          crushed red pepper flakes, optional to taste
